I’ve posted a recipe using the sauces previously, so now I’m going to post a recipe using some of the Szechuan dried ingredients. Namely, the dried chili peppers and SiChuan peppercorns.

Hereby I present to you the famous and popular SiChuan dish: Kung Pao Chicken! Sweet, spicy, and a little sour…tender chicken matched with the crunchy peanuts…I mean really. What more can you ask for in a dish? Well, I guess you could ask it to look a little more appealing. Sorry for the un-tasty looking picture. I promise the dish itself it scrumptious!

Kung Pao (or Gong Bao, in real Chinese) Chicken
From Land of Plenty

2 boneless chicken breasts
3 cloves of garlic and an equal amount of fresh ginger
5 scallions, white/light green parts only
handful of dried red chiles
1 tsp Sichuan peppers
a handful or two of roasted unsalted peanuts

For marinade
1/2 tsp salt
2 tsp light soy sauce
1 tsp Shaoxing rice wine
1.5 tsp potato flour or 2.25 tsp cornstarch
1 tablespoon water

For the sauce
3 tsp sugar
2/4 tsp potato flour or 1 1/8 cornstarch
1 tsp dark soy sauce
1 tsp light soy sauce
2-3 tsp black Chinese vinegar
1 tsp sesame oil
1 tbsp water

  1. Dice up chicken to ~1cm cubes and mix in bowl with marinade ingredients. Set aside.
  2. Thinly slice garlic and ginger. Chop scallions, diagonally, about 5mm thick
  3. Crack/snip the dried chiles (I did it with my hands) into two or thirds, discarding most of the seeds (keep more seeds if you want a very spicy dish)
  4. Mix up the sauce ingredients. Yum yum! Smells good already.
  5. In your pan, add 2 tsb of oil and heat. When the oil is hot enough, add chiles and Sichuan pepper. Don’t let them burn!! You may need to take your pan off the heat. Stir-fry briefly until the oil is fragrant. And it will smell. Really. Fricken. Good.
  6. Add the chicken and fry up. As soon as the chicken pieces are separated, add the ginger, garlic, and scallions. Stir fry until the meat is cooked through.
  7. Stir up the sauce real quick and add into pan. Stir all that shit up. Add some peanuts. Stir shit up some more. Turn off heat and serve. Delish!!
